During the past two years when the pandemic has affected our lives, during the long periods when we did not know how to spend our time, I have often come across photos of bread, pizza, cakes, biscuits on social networks.
Each of us gave vent to our creativity on the table, creating real 'masterpieces'. The house that smells of bread has something magical about it, where ancestral memories and symbolic values are stratified. However, all this has made me realise that the excess of anything, however good, does nothing but unbalance the correct nutritional intake. And often you don't even realise you're eating too much.
What flour contains
Common (industrial) flours contain emulsifiers, flour treatment agents, anti-mould. Not only that. Over the last thirty years, this wheat has undergone genetic modification to give a higher yield.
The result is a 20-fold increase in the gluten content, a substance that triggers chronic inflammation and poor absorption in the intestines. If you feel bloated, constipated, and confused in your mind, chances are you're overdoing something and putting your body through the wringer.
During these difficult months when limitations have made us a little lazy, we must never forget the importance of following a balanced diet and constant physical activity. Taking care of yourself means having respect for your body and soul.
